Sausage Lasagna Rollups

Description

Same great taste as lasagna but so much easier to handle. Great for large parties, just scoop them out of the dish and serve.


Ingredients

Scale
  • 1 TB – Olive oil
  • 2 tsp – Minced garlic
  • 1 lb. – Italian sausage
  • 1 jar(24 oz.) – Spaghetti sauce
  • 2 – Eggs
  • 1215 – Lasagna noodles
  • 10 oz. – Frozen spinach
  • 2 C – Ricotta cheese
  • 2 C – Mozzarella cheese
  • 1/2 C – Parmesan cheese
  • 1 tsp  – Parsley
  • Salt to taste
  • Pepper to taste

Instructions

  • Preheat oven to 375
  • Cook the noodles and rinse in cold water and set aside
  • Thaw and drain spinach
  • In a med bowl add eggs, 2 cups mozzarella, ricotta, parmesan and spinach
  • Mix well and set aside
  • Brown garlic in oil in med fry pan, add sausage cook fully
  • Cover the bottom of a 9×13 baking dish with 1/2 the sauce
  • For each noodle, lay flat, spread cheese mixture all the way down
  • Cover with sausage, about a tablespoon or so and roll up
  • Place each roll in the dish then cover with remaining sauce and mozzarella
  • Sprinkle parsley on top
  • Cover with foil and bake for 20 minutes
  • Remove foil and bake for 10 minutes
  • Serve
