Do you feel like some lasagna tonight but don’t have the time or energy? Try these sausage lasagna rollups, same great taste with half the work. I have to admit I could probably live on pizza and lasagna if I had a super charged metabolism and endless money. Since I have neither I have settled for little shortcuts here and there and one of them is these easy to make rollups.

Description
Same great taste as lasagna but so much easier to handle. Great for large parties, just scoop them out of the dish and serve.
Ingredients
- 1 TB – Olive oil
- 2 tsp – Minced garlic
- 1 lb. – Italian sausage
- 1 jar(24 oz.) – Spaghetti sauce
- 2 – Eggs
- 12– 15 – Lasagna noodles
- 10 oz. – Frozen spinach
- 2 C – Ricotta cheese
- 2 C – Mozzarella cheese
- 1/2 C – Parmesan cheese
- 1 tsp – Parsley
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 375
- Cook the noodles and rinse in cold water and set aside
- Thaw and drain spinach
- In a med bowl add eggs, 2 cups mozzarella, ricotta, parmesan and spinach
- Mix well and set aside
- Brown garlic in oil in med fry pan, add sausage cook fully
- Cover the bottom of a 9×13 baking dish with 1/2 the sauce
- For each noodle, lay flat, spread cheese mixture all the way down
- Cover with sausage, about a tablespoon or so and roll up
- Place each roll in the dish then cover with remaining sauce and mozzarella
- Sprinkle parsley on top
- Cover with foil and bake for 20 minutes
- Remove foil and bake for 10 minutes
- Serve
