Description

One of our favorite soups, our lasagna soup recipe is full of flavor and great on cold days when you need a little warming up. 


Ingredients

Scale
  • 1 lb. Mild Italian sausage
  • 1 1/2 – Medium sized onion chopped
  • 1 C – Carrots chopped
  • 4 tsp – Minced garlic
  • 4 C – Chicken broth
  • 14 oz. can – Stewed tomatoes
  • 1 C – Bowties
  • 1 C – Frozen spinach
  • 1 C -Shredded mozzarella
  • 1/4 C – Parmesan
  • Basil to taste 

Instructions

  • Heat oil and minced garlic in large fry pan until garlic is slightly brown on med heat
  • Add onions and carrots and cook until both are tender
  • Add sausage and cook thoroughly
  • Add broth and tomatoes and turn heat to high and bring to boil
  • Add pasta and simmer until noodles are tender
  • Stir in spinach and cover for 10 minutes to allow ingredients to marinate 
  • Sprinkle mozzarella parmesan and basil then serve
