I am a huge fan of soup and this is one my favorites. Perfect for any time of the year but soup always seems to go best with cold weather. Lucky for us we live in an area where there is no shortage of cold days, nights, weekends, etc.. Warm up your day and try this wonderful take on lasagna soup.

Description
One of our favorite soups, our lasagna soup recipe is full of flavor and great on cold days when you need a little warming up.
Ingredients
- 1 lb. Mild Italian sausage
- 1 1/2 – Medium sized onion chopped
- 1 C – Carrots chopped
- 4 tsp – Minced garlic
- 4 C – Chicken broth
- 14 oz. can – Stewed tomatoes
- 1 C – Bowties
- 1 C – Frozen spinach
- 1 C -Shredded mozzarella
- 1/4 C – Parmesan
- Basil to taste
Instructions
- Heat oil and minced garlic in large fry pan until garlic is slightly brown on med heat
- Add onions and carrots and cook until both are tender
- Add sausage and cook thoroughly
- Add broth and tomatoes and turn heat to high and bring to boil
- Add pasta and simmer until noodles are tender
- Stir in spinach and cover for 10 minutes to allow ingredients to marinate
- Sprinkle mozzarella parmesan and basil then serve
