Add some tomatoes, a little onion, and balsamic glaze and transform your same old pasta into bruschetta pasta. We’ve always enjoyed traditional bruschetta and thought why not try this on top of pasta. My original idea was to just dump our bruschetta mixture right over the freshly cooked pasta but that turned out dry and kind of flavorless. We tried again and added a little spaghetti sauce to the mixture and that made all the difference.
We fried up some garlic and diced tomatoes while the pasta cooked. Once the pasta was just about done we threw in the rest of the mixture and let it fry up for just a minute or two. Once the pasta is drained add the spaghetti sauce to it to keep it from sticking and help tie in all the flavors. Just scoop your mixture over the pasta, put some sliced mozzarella on top then finish it off with some balsamic glaze.

Ingredients
- 1 lb. – Angel hair pasta
- 14.5 oz. can – Petite diced tomatoes
- 2 C – Spaghetti sauce
- 3 – Chopped tomatoes
- 1/2 – Chopped onion
- 8 slices – Fresh mozzarella(slices are based on mozzarella ball)
- 2 tsp – Italian seasoning
- 2 tsp – Basil
- 2 TB – Minced garlic
- 2 TB – Olive oil
- Balsamic glaze to taste
- Parmesan cheese to taste
- Sea Salt to taste
Instructions
- Add pasta to boiling water
- Heat 1 TB oil and garlic on med heat until brown
- Add the can of diced tomatoes and turn heat to low
- Mix in basil, salt and Italian seasoning(cook for about 5 minutes)
- Once pasta is done add the cut tomatoes and onions to the fry pan and stir(cook for 2 minutes)
- Drain pasta and return to pan
- Add remaining oil and spaghetti sauce to the pasta and stir
- For each plate add pasta, bruschetta mixture and top with fresh mozzarella
- Drizzle balsamic glaze and add some parmesan
- Serve
Notes
For the Balsamic glaze we use the Market District Glaze from Giant Eagle. We have made the glaze in the past but honestly this is hard to beat.
