Let me start off by saying I have no idea why they call it watergate cake. We’ve just always called it that but basically it’s a pistachio cake which I had also never heard of. This is one of our go to desserts when we are asked to bring something to a party. The only problem is that there is never any leftovers.
I am not a baker but luckily my wife is. This is just a two step process. For the first step we just mix all the cake ingredients up then bake. For the Icing, the second step, mix everything up and spread on the baked cake. All that is left after this is to refrigerate for a little bit then serve.

Ingredients
Cake
- 1 box – Vanilla cake mix
- 1 box – Pistachio pudding
- 3 – Eggs
- 1 C – Vegetable oil
- 1 C – Ginger ale or Sprite
Icing
- 1 box – Dream whip(2 envelopes)
- 1 C – Milk
- 1 box – Pistachio pudding
Instructions
Cake
- Mix the cake ingredients in a med bowl
- Grease a 9×13 baking dish and pour mix in
- Bake at 350 for 30 – 35 minutes
Icing
- Mix the milk and Dream Whip according to directions
- Add the pudding and mix thoroughly
- Spread mixture over the cake and refrigerate for 1/2 hour
