Taco Chili

When it comes to chili, no matter who you talk to, they will claim that theirs is the best. From spicey to mild, soupy to thick, chili is one of those wonderful recipes that can be tailored to its creator. For our Taco Chili recipe we decided to take the road not taken, healthy. Yes, I know the sacrifice we often make when we throw that ‘H’ word into a recipe; taste. I will say that while I will not claim that this is the best chili I have ever had, it is pretty damn good and you can feel a little better about yourself after your fourth bowl.

Description

Our Taco Chili is a nice alternative to any traditional chili recipe that will save you time and some calories. Heat it up or cool it down, it’s totally up to you.


Ingredients

Scale
  • 1 lb. – Ground turkey
  • 1 C – Frozen corn
  • 1 C – Black beans
  • 28 oz – Petite diced tomatoes
  • 1/4 C – Water
  • 1 tsp – chipotle chilis
  • 1 TB – Chili powder
  • 1 C – Fritos
  • 2 C – Shredded cheddar cheese (use reduced fat for healthier version)
  • Salt pepper to taste

Instructions

  • Preheat oven to 350
  • Heat a large frying pan to med-high and coat with cooking spray
  • Add turkey and brown
  • Turn heat to low and add beans, corn and water.
  • Cover and let simmer for 5 minutes or until corn is soft
  • Turn heat to med and add tomatoes, chilis and spices
  • Stir mixture together and heat for approx. 5 minutes
  • Coat a 9×13 baking dish with cooking spray and pour in mixture
  • Top with cheese then spread the Fritos evenly
  • Bake for 20 minutes
  • Enjoy!

 


Notes

For a little spicier version add more chili powder or even add some red pepper flakes.

Add (low fat) sour cream upon serving.

You can use baked Fritos to knock off a few calories
