Description

A wonderfully fresh and healthy cod recipe. Seasoned with a variety of spices and topped with fresh tomatoes and a hint of lemon and Parmesan Cheese this recipe will be a hit with everyone in the family.


Ingredients

Scale

Spices

  • 1/2 tsp Salt
  • 1/2 tsp Paprika
  • 1/4 tsp Black pepper
  • 1/4 tsp Cayenne pepper
  • Pinch Red Pepper Flakes(optional)

Main

  • 3 lbs. Fresh cod
  • 2 TB Melted butter
  • 1 TB Lemon juice
  • 2 Tomatoes(sliced)
  • 2 TB Fresh Parmesan Cheese

Instructions

  • Mix the spices together and set aside for later
  • Preheat oven to 425 degrees
  • Cut fish into 4 portions and arrange in a baking dish
  • Microwave butter for 20-30 seconds and then brush each fillet until butter is gone
  • Drizzle the lemon juice equally over each fillet
  • Sprinkle the spices and coat each fillet evenly
  • Cut tomatoes into thin slices and place 2 slices over each fillet
  • Sprinkle cheese over each fillet, covering each tomato slice
  • Bake fish uncovered for 20 minutes or until fish starts to flake
