Chicken Sausage Penne Pasta

Don’t let the name scare you our chicken sausage penne pasta is a basic layering recipe. The beauty here is you can add as many layers as you want. Start off by heating some oil and garlic up in a large pan on medium heat.

Our first layer is simply adding the peppers and onions to the pan. You want to cook these until they begin to soften unless you like a little more crunch.

For our next layer we add the sliced sausage, make sure you stir often until the sausage is cooked thru. This is also the step where I like to add most of the spices. After the sausage has cooked turn the heat down to low.

Our last layer or step is basically adding the noodles and spinach. Stir everything up and cover. Let simmer for a bit then top with parmesan cheese and serve.

Description

Full of flavor and pretty healthy. We used to make this recipe with regular sausage then one day decided to make it a little healthier by replacing it with chicken sausage. To our surprise it actually tasted better.


Ingredients

Scale
  • 1 TB – Olive oil
  • 2 tsp – minced garlic
  • 1 1/2 – Red onion (thinly sliced)
  • 2 – Red bell peppers (thinly sliced)
  • 4 – Chicken sausage links – we use Tomato Basil flavored (slice 1/4″ thick)
  • 1 lb. – Penne pasta
  • 1/4 C – Shredded hot peppers (can substitute mild)
  • Handful – Fresh Spinach leaves
  • 1/4 C – Feta cheese
  • 2 TB – Parmesan cheese 
  • 1 tsp – Basil
  • 1 tsp – Oregano
  • 1 tsp – Italian seasoning
  • 1/2 tsp – Garlic salt
  • 1/2 tsp – Parsley
  • 1/2 tsp – Crushed red pepper
  • To taste- Sea salt
  • To taste – Pepper

Instructions

  • Boil pasta.
  • In a large fry pan add oil and garlic and heat on med-low until slightly brown.
  • Add onion and both peppers and cook until soft.
  • Add sausage and stir frequently until sausage is cooked thru.
  • Add all spices to mixture and continue to stir.
  • Add Feta cheese and spinach and stir until spinach has wilted then cover and turn heat to low while pasta finishes cooking.
  • Once pasta has finished, rinse and add to pan.
  • Mix thoroughly then top with parmesan cheese.
  • Cover again for 5 minutes and serve
