Chicken Spinach Panini

Our chicken spinach panini is not as hard as it may look. First you start off by cooking up your pizza dough then pull it out and let it cool. Once cooled just cut it in 4 equal strips.

Next you want to get your chicken cooking because this takes up the most time. Pound the chicken down to about a 1/4″. Put the chicken in a baking dish and cover with chicken broth and some Italian seasoning. While the chicken is cooking we can get the mayo and onions started

For the mayonnaise mixture just mix the mayo and minced garlic together and set aside

Heat up a medium frying pan and add the oil. Slice the onion thin and place into the heated oil. Cook on med-low until onion begins to soften then add sugar and vinegar and turn heat to low. Stir until mixture is absorbed

Now we are ready to build the sandwich. Coat the bottom layer with the mayo mixture then layer with the chicken, spinach, onions, peppers and cheese. Press the sandwhich and serve

Description

I got this recipe from my mom years ago and it is one of our family favorites. This recipe uses pie crust but we have substituted Ciabatta bread in a pinch. A great way to get your meat and greens all in one. Like most of our recipes, experiment a little and add your favorite toppings.


Ingredients

Scale
  • 4 –  Chicken breast
  • 1  –  Refrigerated pizza crust
  • 1 – Med-large onion(sliced)
  • 1/4 C – Mayonnaise
  • 1 TB – Red wine vinegar
  • 1 TB – Sugar
  • 1 tsp – Minced garlic
  • 2 tsp – Olive oil
  • 1 pack – Frozen spinach
  • 4 slices – Provolone cheese
  • 8 oz. – Chicken broth
  • 1/4 C – Banana peppers
  • 1/4 tsp – Italian seasoning

Instructions

  • Preheat oven to 375
  • Spray a baking sheet lightly with a non stick spray
  • Spread the pizza dough evenly across and poke with a fork to prevent over-rising
  • Bake for 10 minutes then pull out and let cool
  • Once cooled cut into 4 equal pieces then cut those in half
  • Each strip will be the top and bottom of your panini
  • Preheat oven to 400
  • Pound chicken breast to 1/4″ thickness
  • In a 9×13 baking dish add chicken and broth
  • Bake for 35 minutes
  • While the chicken is cooking mix mayonnaise and garlic in a small bowl and set aside
  • Cook spinach and drain
  • Heat a medium sized frying pan up and add oil.
  • Add sliced onions to the pan and cook until onions soften
  • Add the vinegar and sugar and turn heat to low
  • Stir onions until mixture is absorbed
  • Coat the bottom half of the pizza bread with the mayonnaise mixture
  • Place chicken on top then add the spinach, onion, peppers and cheese
  • Place the top layer 
  • Sandwich can either be pressed in a panini maker or you can heat up a small pan and press each side for about a minute
  • Serve
