Description
I decided to make Chicken Piccata the other day and it was lacking something, oh yeah, flavor. So we went back to the drawing board and added some of our favorite ingredients and voila; flavor.
Ingredients
- 3 – Boneless chicken breast
- 2 – Eggs
- 1/2 C – Chicken broth
- 2 TB – Lemon juice
- 2 tsp – Minced garlic
- 1/2 C – Flour
- 1/2 C – Parmesan cheese
- 1 TB – Parsley
- 3 tsp – Olive oil
- 1/4 C – Shredded banana peppers – I prefer hot
- 3 TB – Ranch dressing
- Salt – To taste
Instructions
- Pound out the chicken breast to about 1/4″
- Combine the eggs(beaten) and chicken broth in a shallow dish
- In a separate dish combine the flour, parsley, and 1/4C of the parmesan cheese
- Dip the chicken in the egg mixture and coat thoroughly
- Transfer chicken to the flour mixture and cover completely
- In a large frying pan heat oil and garlic until slightly brown on Med
- Add Chicken to the pan and cook each side for approx. 5 minutes, make sure chicken is cooked through
- Turn heat to low and add pepper rings and salt to each breast
- Cover for 2 minutes
- Remove breast and drizzle ranch and top with remaining parmesan cheese
